Eating at Home


As the new year is upon us, Fancy and I are eating healthy.  This means a lot of eating at home.  However, as y'all know, okapis love to eat good food, so at home we get a little creative.  One of my favorite meals to eat at home is chicken nachos.


I love Snyder's white corn chips (at only 140 calories per serving - we use 2.5), so those are the basis for this meal.  We then top with black beans, chicken, taco seasoning, cheddar, onions, and black olives.  Fancy has hers finished off with jalapeno rings.  I like mine with tomatoes.   This meal doesn't pack too many calories even with sour cream, salsa, and guacamole.


For a light and delicious snack, I love these tomato tortillas.  I use a 90 calorie gordita style flour tortilla from Wegmans topped with fresh tomato slices, Italian seasoning, and Parmesan cheese.  I toss it in the toaster oven (my favorite appliance by far) for a few minutes to brown it up.  


Oh, and it's fucking cold here, so we got Mr. Biff some boots.  Awesome.

  1. Do you find that your nails immediately after each manicure? A good top coat will keep your nails in fabulous condition for up to a week! Be sure you don’t confuse it with clear nail polish. Buy the top coat instead of a clear nail polish.
